Breakfast potatoes
Ingredients
Diced Yukon gold potatoes | 2 lbs
Diced White Onion | 1/2 lb
Brunoise Jalapeño | 1 medium
Green bell pepper, seeded and diced | 1 medium
Salt and Pepper | To taste
Sriracha | 1 TBS
Neutral oil (canola or grapeseed) to medium | 1-2 TBS
Directions
1. Toss all ingredients except neutral oil to combine
2. Heat neutral oil (canola or grapeseed) to medium (*Pro tip, oil will be shiny and less thick when it’s ready to use)
3. Add potatoes to the heated oil and toss until golden | 2 min
