Breakfast Potatoes

Ingredients
    Diced Yukon gold potatoes | 2 lbs


    Diced White Onion | 1/2 lb


    Brunoise Jalapeño | 1 medium


    Green bell pepper, seeded and diced | 1 medium


    Salt and Pepper | To taste


    Sriracha | 1 TBS


    Neutral oil (canola or grapeseed)
Directions
    Add all ingredients to a bowl and toss to combine


    Heat oil to medium


    Add potatoes to the heated oil and toss until golden | 2 min
*Pro Tip:
    Oil will be shiny and less thick when it’s ready to use
